Do you think a Birthday card with specific age text (front) can be both >  
 
1. In the Birthday - age specific category  
 
AND...
 
2. In the Birthday - Sports Specific category if all the artwork reflects the sport too?    undecided

It appears that the answer is "no" referring to Mindy's post under "GCU Announcements" where she is discussing how to categorize.

“With that in mind the basic guideline is that a card that speaks to a specific recipient (relationship, age, zodiac sign) can only be in the specific related category.  An exception here is it can also be in a fitting Collections category.  
 
Here are some examples that will hopefully make this more clear.  
 
Father's Day and Mother's Day:  
For Dad or For Mom cards are not considered General cards.  We have Father's Day cards for Uncle, Cousin, Step Dad, Nephew, Son as well as Dad and the list goes on and on.  And Mother's Day cards for Grandma, Sister in Law, Best Friend, Niece as well as Mom and the list goes on and on as well.    
 
These are all Relationship Specific cards, not General.  A General Father's Day or Mother's Day card is one that does NOT specify a relationship and could be given on Father's Day to anyone who is a father and on Mother's Day to anyone who is a mother.  
 
So... they go in their relationship specific subcategory but NOWHERE else under that Holiday:  
Holidays >> Father's Day >> For Uncle  
NOT also here:  
Holidays >> Father's Day >> Sports Specific  (if it's a golf theme)  
BUT CAN also go here:  
Collections >> Sports / Fitness >> Golf “

Specific cards stay within their specific categories.  If we were to allow them in other general categories just imagine the sea of cards shoppers would have to wade through!  
 
So yes, an age specific birthday card goes in the Birthday >> Age Specific >> <age> category.  As a second category you could chose the subject matter under Collections like:
Collections >> Sports / Fitness >> <sport>.  
 
We are pretty loosey goosey in the Collections categories.

Okay, here's the question:  If you put an "age specific" card ALSO in "Collections >> Sports / Fitness >> <pilates>" (for example), if one searched under "Collections >> Sports / Fitness >> <pilates>" wouldn't ALL those age specific cards that are also in THIS Collection category show up ad infinitum? making the "goosey loosey" Collections Category an even greater no-man's land than it already is?  or am I mis-interrupting this.

You are correct...Collections is more a reflection of subject matter vs occasion.  A shopper who chooses to shop a Collection is likely looking for anything Pilates, for example - birthday, blank note card, christmas, etc.  For those that find it a bit of a no-man's land, by design, the7 can head to onsite search which proves to be quite effective.
 
With onsite search producing relevant results the Collections have somewhat outlived their purpose and at some point will go away entirely w/ the exception of a few ie: Any Occasion / Blank Note Cards.
 
A search for "birthday cake" results in over 7,700 cards:

The first page or so is a decent view.  As a shopper I see many varieties of cards including age specific which shows me I have a lot of different choices.  Some I didn't even know I was looking for (ie: age specific).  But Yikes!  Over 7,700 choices is a lot.  Most shoppers at this point will refine their search terms ie: Birthday Cake Pink to narrow down their selection.
 
Yes, newest cards produces similar image cards in a row, that is why the page sort is defaulted to Most Popular.
