Easter for 2 Moms, carrot cake recipe
Inside Text: 1/2 cup butter, softened 1/2 cup honey 2 eggs 1/2 tsp. vanilla 2 med. carrots, shredded 1 cup whole grain flour 3/4 tsp. soda 1/2 tsp. each of salt, cinnamon, and nutmeg 1/2 cup chopped nuts In a medium bowl, cream butter, honey, eggs, vanilla, and shredded carrots. Add the remaining ingredients to the carrot mixture. Combine well and pour into 8X8 inch pan. (greased on bottom only) Bake in 375 degree oven for 25-30 minutes. Top with cream cheese frosting or whipped cream. Enjoy!
